This delicious piccata with sour lemon slices and salty chicken broth. Excellent, just like in magical, fantastic option for snacking.
Ingredients:
- 1 ½ lb. chicken breast tenders, cooked
- 1 ½ cups whole wheat Panko bread crumbs
- 8 cups mixed baby greens
- Juice of 1 lemon
- 3 tbsp. olive oil, divided
- Salt and freshly ground black pepper
- 1 shallot, minced
- Parmesan cheese shaved
- 2 tbsp. capers, drained
- Parmesan cheese shaved
piccata salad Instruction:
- In a large pan, add oil and breadcrumbs and mix well. Place a pan on moderate flame, toast the breadcrumbs, and stir. Add salt and pepper, and then place bread crumbs in a bowl.
- In the same skillet, pour the remaining 1 tbsp of olive oil, heated to a moderate flame. Add the shallot and stir for 2 to 3 minutes or until soft. After stirring for 30 seconds, add the capers and turn off the heat.
- Place the baby greens, bread crumbs, shallot combination, and lemon juice in a sizable serving bowl. Combine by tossing. Add chicken strips and Parmesan cheese on top and divide among four serving bowls.
