  • 8 cups mixed baby greens
  • Juice of 1 lemon

  • Salt and freshly ground black pepper
  • 1 shallot, minced
  • Parmesan cheese shaved
  • 2 tbsp. capers, drained

  1. In a large pan, add oil and breadcrumbs and mix well. Place a pan on moderate flame, toast the breadcrumbs, and stir. Add salt and pepper, and then place bread crumbs in a bowl.
  2. In the same skillet, pour the remaining 1 tbsp of olive oil, heated to a moderate flame. Add the shallot and stir for 2 to 3 minutes or until soft. After stirring for 30 seconds, add the capers and turn off the heat.
  3. Place the baby greens, bread crumbs, shallot combination, and lemon juice in a sizable serving bowl. Combine by tossing. Add chicken strips and Parmesan cheese on top and divide among four serving bowls.
