A savory galette is a French pastry made with puff pastry and typically filled with a delicious filling such as vegetables, cheese, or meat. The puff pastry is rolled out into a thin sheet, and the filling is placed in the center. The pie is then folded around the filling, forming a free-form tart.
Ingredients:
- 1/2 cup shredded sharp cheddar cheese
- 1-1/4 cups all-purpose flour
- 1/4 tsp. salt
- 2 tbsp. minced fresh thyme
- 1/4 cup ice water
- 1/2 cup cold Butter, cubed
Filling:
- 1 cup chicken broth
- 2 cups shredded cooked chicken
- 3 tbsp. butter
- 1 celery rib, diced
- 2 large carrots, sliced
- 2 tbsp. minced fresh parsley
- 8 ounces sliced fresh mushrooms
- 1 small onion, diced
- 1/2 tsp. minced fresh oregano
- 3 garlic cloves, minced
- 3 cups julienned Swiss chard
- 3 tbsp. all-purpose flour
- 1/4 tsp. pepper
- 1/2 tsp. salt

- Combine the flour, cheese, thyme, and salt; then crumble in the Butter. Add ice water gradually while stirring with a spoon, so the dough holds together when pressed. Make a disc out of it, and then chill for an hour.
- Melt Butter in a large pot over medium-high heat for the filling. Add carrots, celery, and onion; simmer and stir for 5-7 minutes or until lightly softened. Cook for a further 3 minutes after adding the mushrooms. Garlic and Swiss chard are added and cooked for 2 to 3 minutes.
- While constantly swirling, slowly pour broth over the veggies. Whisk in the flour, salt, and pepper. Cook for 2 to 3 minutes until thickened. Add chicken and oregano, stirring.
- Set the oven to 400 °F. Roll the dough into a 12-inch circle on parchment paper dusted with flour. Moved on the baking sheet. Spread filling over the crust, stopping 2 inches from the edge. Placing folds as you go, fold the crust edge over the filling, leaving the center uncovered. Bake for 30-35 minutes on a lower oven rack or until the crust is golden brown and the filling is bubbling. Slice after 15 minutes of cooling. Add parsley as a garnish.
