Spring rolls that are tasty, healthful, and simple to make! They make a delicious light meal, dinner, or appetizer when served with homemade peanut sauce for dipping.
Ingredients:
- 2 small Spring onion bulbs
- 1 1/2 tsp Olive oil
- 4 pieces Tomatoes (sun-dried)
- 60 g Buffalo mozzarella cheese
- 2 tbsp Bread crumbs
- 1 Green bell pepper, chopped
- 1/2 tbsp Ginger, grated
- 1 1/2 tbsp Parmesan cheese
- 1 tsp Chives
- 1 tsp Balsamic vinegar
- 2 tbsp Corn flour
- 1 tsp Stock
For the dip:
- 2 tbsp Olive oil
- 8 Basil leaves
- 1 Garlic (smashed)
- 1 tbsp Parmesan
- 1 Chilly
- 1 tbsp Mayonnaise/yoghurt
- 6 Green olives
Instruction:
- Pour a little olive oil into a heated skillet and add the ginger, green bell peppers, and spring onions. Mix well.
- Deglaze with balsamic vinegar, and then pour into another bowl.
- Blend the breadcrumbs, Parmesan cheese, salt, and pepper to taste with the sun-dried tomatoes.
- It is a gentle stir while adding some chopped chives; it doesn’t need to be overly smooth.
- Combine with bell peppers and spring onions.
- Make a paste out of 2 tbsp corn flour and 1 tbsp stock in a small bowl.
- Apply the corn flour paste to a spring roll pan.
- Some basil leaves there. Add the mozzarella and tomato mixture on top of them.
- Make a long, cylinder-shaped spring roll.
- Using stock and cornstarch as a binder
- Serve with the basil dip after deep-frying till golden brown.
Dip Method:
- Add basil leaves, mayonnaise, olive oil, parmesan cheese, a clove of garlic, a green chilli, and green olives to a blender and give it a good whirl.
- Serve the dish with a dash of salt and spring rolls.
