  • salt and pepper, to taste
  • 1 small bunch of fresh cilantro, chopped
  • 1 red bell pepper, seeded and diced
  • 1 small bunch of fresh parsley, chopped

Instruction:

  1. In a big sauté pan, heat the olive oil over moderate flame. Cook for 5 minutes or until the onion turns translucent, after adding the diced bell pepper and onion.
  2. Cook for another minute after adding the garlic and seasonings.
  3. Use a large spoon to break up the tomatoes as you pour the tomato juice and tomatoes from the can into the pan. Add salt and pepper to taste and boil the sauce.
  4. Create small wells in the sauce with your large spoon, and then crack an egg into each well. Cook the eggs under cover for 5-8 minutes or until they are cooked to your preference.
  5. Add chopped parsley and cilantro as a garnish.
