zürcher geschnetzeltes(Zurich Ragout) Ingredients:
- 400 g turkey breast, cut into thin strips
- 400 g mixed mushrooms
- 2 tbsp. olive oil, divided
- 1 tbsp. butter
- 2 shallots, finely chopped
- 1 tbsp. flour or starch
- 2 tbsp. fresh tarragon, chopped
- 1 large garlic clove, minced
- 150 ml chicken stock or broth
- 200 ml cream
- sea salt as required,
- fresh ground pepper, to taste
- 1/2 tbsp. freshly squeezed lemon juice, or more to taste
- Cooked rice, pasta, potatoes, or rösti (for serving)
zürcher geschnetzeltes (Zurich Ragout) Instruction:
- In a large pan, Heat 1 tbsp oil over moderate flame. Add the turkey to the pan and sprinkle a pinch of salt. Cook for 4 minutes until no longer pink remove from pan and set aside.
- On moderate flame, add the remaining 1 tbsp. Of oil, along with the Butter (or ghee), to the pan. The mushrooms spread into a single layer. Cook for 3 to 5 minutes without turning or until one side is caramelized. Cook for 3 to 5 minutes, stir to combine, or until golden brown.
- Lower the heat to medium, add the shallots and garlic, sprinkle with salt and pepper, and sauté for 3 to 5 minutes. Add flour and mix until coated with flour.
- Cook for 1-2 minutes before pouring the cooked turkey breast and lemon juice.
- Add the herbs, cream, and broth. While stirring, cook for 2 minutes. Add additional salt and pepper to taste. Until you’re ready to serve, cover the pan, down the heat to low, and keep it warm.
- Serve with cooked rice, spaghetti, potatoes, or rösti as desired. Enjoy!
