Friends always appreciate this simple flatbread dish. Serve alongside avocado, yogurt, olives, lemon cheeks, mint, and salad greens.
Ingredients:
- 500g lean beef mince
- 4 large pita bread
- 2 garlic cloves, crushed
- 2 tbsp. olive oil
- 2 tsp ground coriander
- 1 small red onion, finely diced
- ½ tsp chili flakes (optional)
- 2 tsp. ground cumin
- Zest of 1 lemon +extra wedges to serve
- ½ cup (65g) grated cheddar cheese
- 60g baby spinach
- 100g feta cheese, crumbled
- Baby tomato, cucumber ribbons, and baby rocket salad to serve
Instruction:
- Heat half the oil in a large nonstick frying pan over a moderate flame. Cook the onion and garlic together for 3 to 4 minutes or until tender. Cook for 5 minutes, or until colored, after adding the mince and breaking up clumps with the back of a wooden spoon. Cook for 1 minute after adding the spices. Set aside to gently cool and season to taste. Add lemon zest after stirring.
- One pita bread covered with half the cheddar. Place half of the meat mixture on top, followed by half of the spinach and feta. Add pita bread on top. Repeat with the remaining cheese, meat mixture, spinach, and pita bread.
- Turn on the medium-high heat on a large nonstick frying pan or BBQ hot plate. Apply the remaining oil on one gozleme’s top and bottom. Cook until golden and brown on each side for 3 to 4 minutes, pushing down with a spoon and carefully flipping. To keep warm, set aside and covered with foil. The remaining gozleme and repeat the process.
- Gozleme is cut into slices and served with salad and lemon wedges.
